The Paper Plane was born in 2008, designed by the renowned bartender Sam Ross as part of the opening menu for The Violet Hour in Chicago. Commissioned by Toby Maloney, Ross crafted this drink to be a summer-friendly riff on the Last Word cocktail.
The drink quickly gained recognition due to its perfect balance of ingredients and its vibrant presentation. Initially, Campari was used in place of Aperol, but the formula evolved to its current form, with Aperol lending a lighter, citrus-forward profile.
Ross's experimentation extended to the choice of whiskey. After testing rye, applejack, and other spirits, bourbon proved to be the ideal fit, adding a smooth body without overpowering the other components.
Today, the Paper Plane has achieved global popularity, appearing on menus worldwide. Its inclusion in the International Bartenders Association (IBA) list highlights its status as a modern classic, celebrated for its innovative yet approachable nature. Its versatility and ease of preparation have ensured its enduring appeal in the cocktail world.
