In this vibrant setting, the Italian vermouth producer Cinzano saw an opportunity. They were looking to establish themselves in the Brazilian market, which was dominated by Cachaça, the local sugarcane spirit. Instead of competing directly, Cinzano decided to create a cocktail that would incorporate both their vermouth and the beloved Cachaça.
The result was the Rabo de Galo, a drink that perfectly encapsulated the multicultural spirit of São Paulo. It combined the Italian tradition of aperitivo with Brazil's national spirit, creating something entirely new and uniquely São Paulo.
Over time, the cocktail evolved. The addition of Cynar, another Italian import, added an extra layer of complexity and bitterness that perfectly complemented the other ingredients. This version became the standard, cementing the Rabo de Galo's place in Brazilian cocktail culture.
